Ginormous Peanut Butter Cups (better than store bought)

Recipe: (makes about 2 dozen large peanut butter cups)
  • 4 Cups Powdered Sugar
  • 2 Cups Peanut Butter (I prefer the all natural type- healthier)
  • 2 Tbs. Melted Butter
  • 3 Tbs. Milk (depending on the consistency of the dough feel free to add more to make it smoother- but not too much!)
  • 1/4 Cup Flax Seed Flour (yes, I sneak something a little healthy in there to make me feel better about being addicted to these!)
You will also need:
  • About 3 Cups of melted chocolate chips with a tsp. of oil in it.
  • WAX PAPER! (don't try making these on a cookie sheet with no wax paper like *cough* I did)

Mix all ingredients until they are smooth- you want a chocolate chip cookie dough consistency. Once you get that, roll it out and get the cookie cutters out! Freeze until very hard & dip in melted chocolate. Scrape excess chocolate off on side of bowl & pot on wax paper. Let harden in freezer (about 15 minutes.)

Last but most important: GIVE THEM AWAY (or you will be very much in need of a workout)
*These save very well in the freezer (covered in chocolate or not covered)

  1. These are incredible!

  2. I am SO making these this weekend!! Thank you for sharing!!!

    1. No Problem! They are amazing!

      Merry Christmas :)

      Love, Hannah

  3. Can you make these with regular All-Purpose Flour?

    1. The flax seed flour is totally optional. If you want, just substitute that ingredient with more powdered sugar.

    2. Thank you for the quick reply. Two more questions--is flaxseed meal the same as flaxseed flour? I cannot seem to find flaxseed flour anywhere but only the meal. Lastly, does it matter what kind of oil you use? I imagine not olive oil but something more like canola or vegetable oil?

Thanks for all your help! I love your blog!

    3. Flaxseed meal should work just fine. Vegetable oil should work great!

Let me know how you like them! They are dangerously addicting!

  4. aside from flaxseed, what else can i put it to substitute that portion?:)

    1. Just substitute it with extra powdered sugar. I really only added it in there to make myself feel better about eating them! :P
